UNO, Waterfront Group of Hotels’ international buffet and a la carte café and restaurant will host a festival of flavors entitled, “UNO’s Modern Filipino Taste: A Filipino Feast for All Senses” at the Waterfront Hotel and Casino Mactan from June 8 to August 31 and at the Waterfront Cebu City Hotel and Casino from June 9 to August 31.

The flamboyant festival offers a variety of Cebuano dishes with a twist such as the Lechon Kambing, Beef Lechon, Spicy Lechon, Puso Surprise (hanging rice with a special filling inside) and Crusted Salted Fish. These dishes were created by celebrity chefs Roland and Jackie Laudico, who both have a vision of serving Filipino cuisine in international buffet spreads around the world. Their artistic culinary creations are also featured at their sought-after restaurant Guevarra’s in San Juan, Metro Manila.

Mouthwatering Filipino desserts such as Pichi-pichi, Cassava Cake, Munchkin Biko, Halo-halo, and Chocolate Peanut Butter Mousse are also available for diners.

Cold appetizers such as Kinilaw Spoons composed of fresh fish fused with spicy calamansi and capsicum emulsion, Danggit Macaroon stuffed with Laing Mousse and Shrimps and Sushi-Noy which is a Filipino maki topped with matambaka flakes are also an all-time favorite.

LAST April 7, Waterfront Cebu City Hotel and Casino hosted the first-ever Disciples D’ Escoffier Dinner and Oath Taking Ceremony in Cebu.

Disciples Escoffier is an organization which honors the memory of Auguste Escoffier, Master of the French and International Cuisines. The purpose is to promote the big traditions of cooking and the techniques created by Auguste Escoffier in particular in schools, secondary, superior or Chef professional training, as well as in apprenticeship.

A sumptuous dinner was held at La Gondola which started off with Gensan tuna done in three ways – mousse, seared and chips. Bohol Prawn Bouillabaisse with Shrimp Jelly for the soup, and was followed by Bulalo Risotto with Bone Marrow. For the main event was Premium Australian Lamb Rack, Mint Butter, Bell Pepper and Zucchini Shavings, Layered Polenta and Red Wine Jus. To cap off the meal, Cebu Mango and Chocolate Sphere with Hot Caramel, Calamansi Rum Sauce was served.

The dinner was graced by the Founding President of Disciples de Escoffier International Asia – Philippines Delegation, Chef Philip John Golding, Secretary General Ms. Donna Sheryl Chua, Corporate Chef Giovanni Sias, Executive Chef Linda Hou, General Manager Mr. Anders Hallden.
